Our Chillis

We grow chillis that range from the mildest to the hottest in the world. 

Each year we like to mix it up and experiment with new varieties from around the world. 

Here are our chillis for this season.

Aji Amarillo

SHU 50,000

From Peru, this chilli is thick fleshed and moderately hot.  Widely used in South American cuisine.  It has been said that if there was a chilli to taste like sunshine, this would be it.

Aji Panca

NEW THIS SEASON!

From Peru, another popular chilli in Peruvian cuisine.  Whilst mild in heat, it is said to have a unique and complex flavour profile, which is smokey but fruity in flavour, with hints of blueberry.  Can’t wait to see this one grow.

Australian Atomic Heart

NEW THIS SEASON!

Couldn’t resist this one.  Said to be like to the Australian Desert, this chilli is large and bright red, shaped like a heart.   Looking forward to launching some unique all Australian chilli sauces for this Australia Day.

Birds Eye

From Thailand, this chilli has a sweet then citrus flavour with a good level of heat.  Typically used in Thai and Vietnamese cuisine.

Black Czechoslovakian

NEW THIS SEASON!

A European heirloom variety which has a beautiful black colour, with a mild heat.

Cayenne

From French Guinea, this well known and popular chilli is used fresh and dried. Here at Hot Chilli Mama, we ferment them to create an authentic Louisiana Hot Sauce with a kick.

Fatalli

An African heirloom chilli, with a rich fruity citrus flavour and quick heat.

Guajillo

From Mexico, this is one of the most common chillis used in Mexican cuisine.  It has a tangy, fruity flavour with mild to moderate heat.  Commonly used in Harissa paste.  Guess what we will be doing with this?

Jalapeno

From Mexico, this is probably the most popular chilli in the world, and for good reason.  It is a great chilli and so versatile. When ripe and smoked properly, it also becomes a Chipotle – something we will be doing ourselves this year.

Mulato Isleno

A Mexican chilli, this is the most prolific chilli we’ve grown.  Big, thin skinned with full flavour and mild heat.  This chilli has a multitude of uses.

Red Cap Mushroom

From America, this chilli has exceptional taste with a unique blend of spice and fruitiness.

Santa Fe

A Mexican chilli which is sweet, juicy and crunchy.  They are great pickled, so guess where you will find them in the Hot Chilli Mama store, yep under Pickles.

Serrano

A Mexican chilli which takes it a notch up beyond the Jalapeno.  It is great versatile chilli, which can be used either green or when ripe as red.

Aji Limon

From Peru, this chilli has a distinct citrus tang, but with a medium chilli heat.

Anaheim

A popular American chilli which is thick skinned and best served stuffed or roasted when green, but ripens to a nice red.

Bhut Jolokia -Yellow

From India, this was once considered the hottest chilli in the world.  It has a sweet, fruity citrus taste which has a slow burn that lingers for a while.

Birds Eye Zimbabwe

A rare African chilli commonly known as Pili Pili which is Swahili for ‘pepper pepper’ with a good heat.

Carolina Reaper

From America, this is currently the hottest chilli in the world.  Whilst it is said that behind the heat it has a fruity flavour, it’s not easy to find given the heat of this chilli.  This chilli is not for the faint hearted and should be handled with extreme care.

Cherry Bomb

From Hungary, this chilli has almost perfectly circular bright red fruit.  With a moderate heat like a Jalapeno, these little babies will be used to make Pickle Bombs this coming season.

From Mexico, this beautiful chilli with a medium heat has a fruity flavour with a good kick.  Got big ideas for this this little beauty.

Habernaro

From the Amazonas, this is cracker of chilli with a clean, intense heat and sweet flavour.  Once the hottest chilli in the world, it has a well deserved place in the hot sauce world.   A chilli not to be taken lightly.  We will be growing a range of these little babies this year.

Joe’s Long Cayenne

From Italy, these chillis are seriously long with a good heat.  Great when dried to infuse heat into oils and vinegar.

Peter Pepper

From America, this chilli is more known for its shape than its taste, said to resemble a penis.  Yep, you read correctly, a penis.  Hence why it’s also known as the ‘penis pepper’.   We’ve grown this one for curiosity sake, now we need to work out what to do with it.  Keep it clean people.

Rocotto

From the Andes, this cold tolerant medium heat chilli is distinguished by its large fruit, often resembling a small tomato and its unique black seeds.

Scotch Bonnet Red

From the Carribean and related to the Habernaro, this little baby has a sweet, tropical flavour with apple and tomato undertones and a quick burn.

Trinidad Scorpion – Chocolate Moruga

From Trinidad, this is a seriously hot chilli and all about the heat. Great for superhot sauces.  But it needs to be handled with care.
